I will be pulling all the stuff out tonight and tomorrow to get pics and the specifics. Not sure what current prices are on Glass Carboy (5, 6.5), pin/ball lock kegs and the like.

I calculated the SG on the 1.1 ish. Bet the acid plays a bigger part in the slow lag. This yeast was only used on the one beer, otherwise I only use it for the lemon brew.

Jim, I have played around with the high gravity yeast and the SG of the yeast food. The book answer is 1040 for most yeast strains to promote happy yeast and prevent autolysis and such. Jim, I have records for a bunch of the strains from 10ul loop from slant to 2L pitch rate, with cell counts (I have a microscope) over the time I was brewing regularly. I will be conducting the same type of experiments/observations when I fire up again. It will be interesting to see how much change ...

One tip if you are going to buy a refractometer ...make sure it has a ATM...automatic temperature modulator. This will allow you to take samples at high temp during the mash and get an accurate measurement. If you get one without an ATM (wine makers typical don't need an ATM) you will have to cool y...
