CB&B is a very good mag. Stan has a lot of articles in it and the publisher (Jamie Bogner) does podcasts. I listened to the one with Stan recently.

You can chill it way down and keep it cold to inhibit more ferm, or filter the yeast out. Either way there might be further fermentation of the sugar (esp if it warms).
Chemicals (Sorbistat) can inhibit the yeast from fermenting.

Couple yrs ago I got a 1 lb pkg from them and it was 2 oz short. I mentioned it to them and they apologized and sent me a 4 oz bag free. I get my simcoe from them.

I've heard that the Dupont yeast may be pressure sensitive (to airlocks), but 3711 is a very aggressive yeast and those numbers don't surprise me.

At room temp it will require very high pressure and/or a lot of time to carb your beer (http://www.kegerators.com/carbonation-table.php).
