Re: Brewing with Hops: Don’t Be Creeped Out [Stan Hieronymus]

CB&B is a very good mag. Stan has a lot of articles in it and the publisher (Jamie Bogner) does podcasts. I listened to the one with Stan recently.

Re: Back Sweeten Cider

You can chill it way down and keep it cold to inhibit more ferm, or filter the yeast out. Either way there might be further fermentation of the sugar (esp if it warms).
Chemicals (Sorbistat) can inhibit the yeast from fermenting.

I wonder, since no butter flavor at kegging, about infection (pedio in line or keg?).

Re: Can anyone give me feedback on use of a Speidel Fermente

I've heard that the Dupont yeast may be pressure sensitive (to airlocks), but 3711 is a very aggressive yeast and those numbers don't surprise me.

Re: KEG QUESTIONS: from a newbie to kegs

The gases will mix, so if you vent all of the pressure back out of the keg, you've effectively reduced the amount of oxygen in the head sp...

If the keg has been cleaned and sanitized you can fill it with clean water and blow it out with CO2.

Re: KEG QUESTIONS: from a newbie to kegs

At room temp it will require very high pressure and/or a lot of time to carb your beer (http://www.kegerators.com/carbonation-table.php). Trying this at room temp could be tricky due to foaming unless you have a counter-pressure filler. Bottle conditioning should be at cellar/room temp and, although...
