I think Andy is right, the problem could be wort composition, because it sounds to me like you're getting enough O2 into the wort for the OG's you're fermenting. I think you should probably look at a 5 lb. cylinder or a 20 lb. cylinder, as the 10 lb. cylinders are not very common.
