Is the Bootleg Biology seminar recorded and available on the club website?

Re: Fermentis Saflager W-34/70 Dry Lager

We'll it's taken a while but this yeast has really produced a good tasting Dortmund bier! I had the primary at 50F for 3 weeks them raised to 65 for a week and then lagered at 34 for about a month. The month wasn't long enough but I kegged it anyway, and have stored the keg at 45'ish for about 8-9 m...

Re: Sour in an Hour? Brewers are experimenting with white koji to speed up the time to acidify their kettle sours.

I'm in the same boat. Probably do a 1-2 gallon batch and see how it goes first. I did just pitch two different saison blends from Bootleg Biology. I have not used their yeast before so I anxious to see how it turns out. 10 gal of 1.060 sort of hoppy saison wort with 5 gals of saison blend yeast and ...

Re: Fermentis Saflager W-34/70 Dry Lager

I appreciate the feedback. I'll try this one in Dec. and also let you know the results. Hopefully we trade a sample along as well for the all important, personal evaluation.

Thanks again,
John

Fermentis Saflager W-34/70 Dry Lager

Can anyone give me feedback about the results when using Fermentis Saflager W-34/70 Dry Lager yeast to make a Pilz/Helles/Dortmund ? I've used lots of Wyeast and White labs varieties but want to considering tying a dry yeast to make a 1.052ish pale lager.

Thanks,
John P.

Re: Smithsonian Magazine article on Charlie Papazian

Ryan, Thanks for posting this article. It was a real pleasure to read. I got to tour the GABF one year in a small group with Charlie. He's a one of a kind guy. A rock star for the hobby. We're all better off because of his efforts to make Home Brew more widely brewed and shared.

Cheers

I'm very curious and might consider trying this method to sour a Berliner Weiss. Has anyone tried it? I'd appreciate your feedback?

I've been a member since the early 1990's and recommend being a member to all. They especially have helpful info for new brewers. They also support local clubs in many ways.

Re: Article: Craft Brewing’s Hot New Style? Beer Made With Spicy Chili Peppers

I've brewed with peppers in the past. My only advise is keep the O2 out as much as possible. The peppers seemed to oxidize, much like hops. But the peppers oxidized quickly.
