I recently kegged an Octoberfest, and with the first sample, I was overwhelmed with butter, which I presume to be diacetyl. I’ve never had this happen before. Both aroma and flavor. We're planning to brew a couple octoberfests this fall and I know that you need a lot more yeast than with ales. Some recipes I'm reading suggest up to 2 gallons of starter. So how do you make a 5 gallon batch and still add 2 gal. of starter? Do you crash the starter and just pitch the slurry? Also,...

Burst Wyeast pac

While sanitizing the top of my Wyeast pack, it burst a pinhole leak along the top seal. I realized this happened after noticing the sanitizer starting to turn opaque. I don't think I lost much, fortunately caught it right after it happened.
Has this happened to anyone?
