Re: Moving sale!!!..

I might be interested in that banjo burner. How small is "small"? Care to send me a photo?

Allagash koelschip room

I've shown this video to some of you already, just never got around to posting it. Allagash's first spontaneously-fermented beer.

Vollkornbrot with Flaxseeds

This is the formula for the rye bread served last week, and the same bread used in the kvass. It is an adaptation of a formula from my friend and colleague, Jeff Hamelman. Sourdough Whole Rye Flour, 12.2oz(3 1/4cups) Water, 12.2oz(1 1/2cups) Mature Rye Culture, .6oz(2T) Prepare the sourdough and rip...

Sourdough Starters

As I promised last night, I posted my seminar materials in the recipe section of the forum. Thanks to everyone for being so quiet and attentive, I really appreciated it. Talking in front of groups that large isn't my forte  , but geeking out on bread certainly is. I'll hammer down a decent for...

Sourdough Starters

As promised at the meeting, here are the materials from the seminar:  As daunting as all of this may seem, it's quite easy once you've tried it. Keeping a sour around can be really rewarding if maintained properly. If you can mix equal parts flour and water together, than you can build a sour...

Thanks for weighing in, guys! Perhaps if I just bring my kettle along with previously tried/failed filtering designs to the meeting this evening, y'all could give me further troubleshooting advice? Didn't realize that wort chillers could be such a hot button issue among brewers. Thanks for pl...

Wort Chiller debate

Hey, everyone-- I think I need to upgrade my wort chiller situation. I currently use an immersion chiller, 50' of 3/8"copper coil, to chill my 10 gal batches. This has caused so many headaches, as copious amounts of cold break settle to the bottom and are clogging flow from my boil kettle. Grrr...

I've been using Tastybrew.com pretty frequently. It's an online calculator that has a forum and a bunch of other stuff including user recipes. I usually will take an existing recipe and modify it to my liking.
