Yeah, definitely keep an eye on the temp. 40 degrees is the start of the 'danger zone', so if the brine temp creeps up close to that, I add some ice or move the bucket outside if it's cold enough. I like to use brining as a method to speed up the thawing process, so it's kind of dual purpose. It's ...

There is a linweld drop at Napa autoparts on Iowa in Lawrence, they took my out of test Coke tank no questions asked, praxair wouldn't touch it. It is likely these tanks are out of certification (every 5 yrs). $35/tank is not unusual for re-certification. Find a Linweld bottle drop and they take almost anything.
