At what strength ( amount ) do you use in the water ? Chemistry is not my thing but a warm salty pretzel and cool pils is driving my need to know. Also, Can you use the same lye as a cleaner for the brewery ? Is the strength ratios the same ? If you have any other thought's or warnings let me know. ...

Sinamar vs. Carafa for a CDA ( Black IPA )

Has anyone brewed a CDA using either or both Sinamar or Carafa? Have you made one with only one or the other? What good came from it and what would you change?

If you've used the Sinamar how much did you use for what size batch?

If you have any other suggestions I'm all ears.

All the previous comments will work and help. I've personally added only at the 10 minutes to go mark. I also keep the temperature warmer towards the end of the primary fermentation. This will insure the yeast keeps active and you achieve a dry finish. Mash low 147-150 is OK. At that mash temp I alw...

Cardboard flavor's are common on hoppy brew's that are exposed to oxygen. The hop oil's are oxidized. This is common on bottled beers that have to travel. I do not know of a way to take this out/ reduce after it is in solution. The best way to keep from incuring this is that once the primary ferment...
