I have a similar setup to the first two pics but with 2x4s for the collar and a 15 ft^3 freezer. I like it a lot, I'm able to keep 4 kegs, 1 carboy and lots and lots of bottles cold, all at once. I don't have the multi-pressure system though.

Why .5 then? You're getting the sediment and bacteria (which the city should take care of anyway) but the dissolved mineral count of the water would be largely unaffected. I assume you use activated charcoal as well?

Are you sure you meant .5? Most household ones I see are 5 or 10 and .5 is damn near sterilization quality.

What do people use to filter their brewing water? I've looked at several options, mostly whole-house jobbers or RV externals that I would rig to my garage wall or something. To filter chlorines, I need a carbon filter, yes? And chloramines are also filtered using carbon but at a much slower flow rat...

Oh, sure. JWL had massive problems, no doubt. Their yeast selection, my biggest complaint, was absolutely atrocious and wildly out of date. I purchased a 3638 a few weeks ago that was from March!

I was always under the belief that oxygen and UV radiation were the main contributors to decreased shelf life of hops. Are you saying that the UV is not a huge concern to begin with or them being stored at the back of a store, in an opaque-sided fridge reduces this risk?

I went to Brew Lab yesterday. Not a crazy huge selection of grains but very decent and good prices. Good selection of yeast and hops too but they buy the hops in bulk and repackage in clear vacuum seal bags. Probably not the best for long term storage.

Congratulations! Welcome to the club. How did you cool the wort that it took 24 hours to cool to 60? And don't be mistaken, that wait will be well worth it when you're drinking your own cold beer!
