Deal on liquid malt extract at Cottins

Talked to the guy at Cottins yesterday and he has several cases, 66# each, of liquid malt extract and he wants to sell them at cost, about $80 ea. They were ordered incorrectly and would rather sell than ship back. He has a couple varieties.

Dry hopping with pellets question

Considering dry hopping with pellets instead of whole hops. Any feedback/advise such as: do I use the same weight ounce to ounce? More or less contact time? Should I contain the pellets in a mesh bag?
I'll dry hop at the end of primary, then go straight to serving keg (no secondary).

I've got an extra 2 gallons of hefe still in the primary after 2 weeks, and want to throw some fruit on it then keg in another week. Planning on mango. This will be fresh diced, not pre-frozen. Question: How much fruit per gallon? I've read 1 lb per gallon, does this sound about right? Also, if I us...

Sugars at Natural Grocers

Shopped at Natural Grocers on 23rd St for the first time yesterday. They have quite an extensive offering of sugars - date, cane, beet, raw, turbino, etc. And lots of rolled grains. Will be a good resource for brewing adjuncts.
I'm still a Merc man, though.

Fruitcake kvass, anyone?

Just had an inspiration - what to do with unwanted holiday fruitcakes, english puddings, etc?
How about a kvass? Instead of rye bread, we could put these sticky, chewy, leaden items to good use in a brew.
Anyone want to do this with me? Any donations?

Finally! Sourness! Nice soft sourness setting in. Bready character in the distant background. Still cloudy but beginning to clear.

Rob, Wyeast websites says of this yeast, "A flocculent, true top cropping yeast (additional headspace is recommended)". I guess so!

I brewed 10 gal of saison the last week of July using Wyeast 3724 Belgian Saison. 1058 OG. Fermentation temp ranged between 80 and 85 deg. Vigorous fermentation within hours. Discovered this morning 7/20 that the gravity is still 1032... On Wyeast's website, they say, "This strain is notorious ...

sampled again this morning (yes, 7 am...). Not much flavor change. Still bready/yeasty, cloudy copper color. Very little sourness, which I still think is from the flaked rye. No odd off flavors or high alcohols, even after a week storage in 85 deg garage. Must have been a very clean pack of bread ye...

Kegged tonight and charged with co2. in the heat of the garage, i didnt feel like messing with a bottling line.
It dropped a point from 1012 to 1011, with maybe a touch more sourness, but still mild. Looking fwd to trying it when it chills.
