Has anyone experimented with creating a sour mash? I am planning yet another attempt at a Guinness clone, and I want to add this element, as I?ve read about elsewhere. So have you been able to wait 6 months??
I made this last year and it is nearly all gone. I agree with the aging, but I enjoyed it at all levels of aging. I will say that now at about 12 months (current age) it's taking on a bit of a harsh note.
