Had a few requests for this recipe. Here you go:

Chocolate Chip Carrot Cake cookie sandwiches
1 stick butter
1/3c plus 2T granulated sugar
1/3c plus 1T brown sugar
1/2 tsp vanilla extract
1 egg
Mix above ingredients on medium speed until light & fluffy, about 2 minutes

1-1/8 c all purpose flour
1/2tsp baking soda
1/2 tsp salt
1 tsp freshly grated cinnamon
1 c grated carrots
Mix and add to wet ingredients until just mixed, then add:

1/2c semisweet chocolate chips
1/2c toasted walnuts

Stir to combine. Scoop 1/2T onto buttered baking sheet. Bake at 375 for 12-14 minutes. Let cool then drop 1T of cream cheese mixture (below) on the back of a cookie, and sandwich with another of like size.

Cream Cheese Mixture:
8oz cream cheese
1/4c honey
1 tsp freshly grated cinnamon
2T softened butter
Mix by hand until smooth

Sweet, I was a little bummed I didn't get one
