LBG Minutes – February 2011

Tasting

*Please* pour a small sample, perhaps only a one-finger measure; many people did not get to taste all of the beers.

This month featured chocolate stouts. Chocolate flavors can be introduced by using nibs, powder, or essence. These can be added to the primary or secondary, or one can make a tea or extract for kegging or bottling. Chocolate makes a good flavor addition for stouts, porters, browns; even for blonds!

The three samples were:
1) Fort Collins Brewing Chocolate Stout – roasty/coffee flavors, dry, not overwhelmingly chocolate
2) Chocolate Oatmeal Stout by LBG’s own brewmeister: Angelo – richer, more chocolate-y, sweeter than #1 but not cloying. Used cocoa nibs.
3) Young’s Double Chocolate Stout – tasty

People’s favorite seemed split pretty evenly.

Seminar
Sour Dough starters – Look for the handout posted in the forum!
