LBG Minutes – May 2011

Tasting
This month’s tasting featured fruit beers. There is a wide variety of fruit beers. Most importantly, they should be a good beer that has a good overall balance of flavors – not too fruity, but with a nice highlight. There are a variety of ways to get the flavors into the beer, with additions at nearly any stage of the process: in the kettle, hopback, primary, secondary, as an extract in the keg, or any combination.
The three samples were:
1) Crown Valley Brewing Raspberry Wheat.
2) Sam Addams Blackberry Witbier.
3) 21st Amendment Hell or Highwater Watermelon Wheat.

Seminar
Dan gave a great presentation on California Common / Steam Beer. It’s a uniquely American style of beer, with a history going back to the Gold Rush in the 1850’s – 1860’s. They are toasty (not roasted) and caramel-ly with a pronounced hop bitterness and a medium mouth-feel. The BU/GU ratio is 0.8 to 0.9. Step mash at 140-145, 149-154, and 158 (this raised eyebrows at the meeting). Northern Brewer hops are most typical, occasionally Cascade. The yeast is most likely a mutated Alt or Lager strain, fermentation in shallow vessels. The finished product is effervescent – “over-carbonated,” about 3 volumes CO2. We sampled Anchor Steam and a tasty home-brewed example by Dan (1.053/63IBU).
