Tasting
This month’s tasting featured Lambics + Wild Ales.
Lambic style-
Color:light to pale for base lambics (SRM:3-7); but color could vary greatly with fruit lambics.
Aroma: “barnyard, earthy, goaty, hay, and horse blanket”
Mouthfeel: Thin body due to dryness.
Hopping: no hop flavor or aroma in sour or limbic; use aged, “cheesy” hops; used not for bittering but rather for preservative qualities; use low alpha acid hops (nobles such as saaz, hallertau, tettnanger or English hops such as EK goldings.)
Five examples:

1)Lindeman’s Gueuze
ABV:
IBU:
Described as Lambic Gueuze
Hops:
Tasting Notes: Before the bottling of the Gueuze, a blend is made of 2/3 young Lambic and 1/3 old Lambic. The right ratio young/old is depending on the maturation degree (end attenuation) of each of them. The bottles, with the wild-spontaneous yeast flora, are refermented in the cellar (Method Champenoise). (Pasteurized)

2) Green Flash Rayon Vert
OG:
FG:
IBU:32
ABV: 7%
Recipe Notes:
Hops-no idea but hoppier than one might expect from a wild ale.
Grain Bill:
Tasting Notes:
Orval inspired, Goaty
Aroma: Plenty of musty Brett aroma; orange, lemon zest?
Taste: Bitter up front, balanced with malt backbone, delicious Belgiany-Brett flavors; lingering bitterness, but not harsh.
Mouthfeel: Effervescent

3)Odell Friek
OG:
ABV:6.5%
IBU:
Recipe Notes:
(From the website) FRIEK is an evolution, an imaginative amalgamation invented by our brewers. Multiple KRIEK Lambic style ales are fermented with WILD yeast and TART cherries and then moved into OAK BARRELS to age and sour taking on the CHERRY flavors. As the beer matures, FRAMBOISES (raspberries) from Schroyer Family Farms in Fort Collins are handpicked and readied for the beer. The fresh RASPBERRIES are added immediately prior to the final blending. The sweet and tart flavors MINGLE on the tongue with a sparkling dry finish.

4)Tom Bastian-Blueberry or wineberry lambic
OG:
FG:
ABV: 8%
IBU: 33
Recipe Notes:
Hops-Nelson Sauvin
From Tom:
*Solera Wild Ale group brew
*Base beer approx. 1.5 years old (cherry, blueberry, and wineberry)
*Before full attenuation reached, about 1.020 SG, the beer was moved into a 55 gallon wine barrel with bugs to finish fermentation; stayed in barrel for 8 months.
*The first 20 gallons was pulled off the barrel and moved onto three different fruits; one on cherries, one on wineberries, and one on blueberries.
Tasting notes:
Aroma: Fruity, acidic
Mouthfeel:dry

5)Chris Stenger-Flanders Red aged in wine barrel
Style: Flanders Red Ale
ABV:
IBU:
Taste/Aroma: Oaky
Quotes of the tasting:
“In your notes, this needs to be brought to you by the word delicious.”
“You guys didn’t make this did you?..o.k. good.”
“Snot.”
“This beer is a little crunchy, just wanted to let you know.”
“These chunks are actually death.”
“Onion skin.”
