Rob Dewhirst featured in Brew Your Own

Great American Beer Festival: This year's Great American Beer Festival is being held September 25-27 at the Colorado Convetion Center in Denver, Colorado. The Great American Beer Festival has been held every year since 1982 and is presented by the Association of Brewers, a not-for-profit educational and trade organization founded in 1978 that is devoted to making quality brewing and beer information available to anyone. The Association of Brewers serves craft and homebrewers.


Minutes of the August 14th meeting

Treasurers Report: $2187.31 in the account. For the year, we have taken in $885.07 more in revenue than expense. Dale is looking into a $50 account service charge from UMB bank on our account.

Beer Contributions: Dale: Cider, Alaskan Stout, Weisbock. Pete: Apricot Ale, Mead. Joe: Pale Ale

Old Business
Seminars: Not a lot of ideas for fall seminars. Tony from the winery won't be available until November. Pete volunteered to do a label seminar for September. Any other ideas?

Bourbon Barrel Stout: It was generally agreed that it should be pulled off the keg and distributed to the contributors sometime in the next few weeks. When Joe is ready and needs help, he should contact the members via e-mail.

Free State Display: Pete asked if anyone has a photo of the LBG display that was at the Free State Brewery. If anyone does, please contact Pete.

New Business
Brewery Tour: Ideas for an upcoming brewery tour were suggested. Ideas: Blind Tiger in Topeka, the brewpub in Manhattan. Dale is checking on Blind Tiger.

AHA Club Only Competition: Rob suggested we enter the Bourbon Barrel Stout in an AHA Club Only Contest later this year. Dale will check website for upcoming events.

Tasting: Wood Aged Beers
Joe provided two examples of beers aged in wood.

1. Bourbon Barrel Stout: The first beer was the Club's Bourbon Barrel Stout from the Big Brew. All were impressed by the smooth bourbon flavor that is beginning to assert itself. Alcohol seemed evident. No major flaws noted.
2. New Belgium Brewing's La Folie: This limited edition brew is only available at the brewery in Fort Collins, Colorado. It is brewed in the Flemish Red Ale style. Comments included: "very tart, lots of great fruit flavors, great orange color, an excellent, unique brew".


Cooking With Beer
This recipe came from All About Beer magazine. Use a quality Pilsner, especially a Czech one, and the hops will really come through in the sauce. You basically just marinate the salmon, then cook the marinade down to a sauce.

Pilsner Marinated Grilled Salmon

Serves 4

4 Salmon Steaks
1 Tbs. Ground Ginger
3 Cloves Garlic
2 Tbs. Dry Mustard
1 Tbs. Sesame Oil
2 Tbs. Soy Sauce
3/4 cup Pilsner
1/2 tsp. Salt
1/4 tsp. Black Pepper
2 Tbs. Brown Sugar
2 tsp. White Wine Vinegar
2 Scallions, chopped

In blender, blend ginger, garlic, dry mustard, sesame oil, and soy sauce until smooth. Add beer; whisk until combined. Place salmon steaks in glass baking dish (I prefer to use a ziplock bag); pour ginger mixture over steaks and coat well on both sides. Cover, refrigerate and marinate for at least two hours or overnight.

Prepare grill or preheat broiler. Remove salmon from marinade and season with salt and pepper. Reserve marinade. Place salmon on grill or under broiler and cook, turning until nicely charred and cooked through, about 4-5 minutes per side.

While salmon is cooking, warm marinade in a small saucepan over medium heat. Stir in brown sugar and white wine vinegar; bring to a simmer. Cook two more minutes.

Place salmon on serving platter, sprinkle with chopped scallions and serve with marinade sauce along side.
