Lawnmower Bier

I started my real lawnmower bier tonight. I have no idea how it will turn out since I made it up, but it could be a June or July tasting event by our calendar. This is on the condition that it lasts that long if it is good or down the drain if rotten.

.6 oz of fresh Lemon Zest is about 4 nice Lemons
.8 oz of fresh Orange Zest is about 2 nice Naval Oranges.

I used my Microplane to zest the lemons and the oranges so that no pith was included in the zest.

5 lbs Pilsner (2 Row) Ger (2.0 SRM) Grain 48.78 %
5 lbs Wheat Malt, Ger (2.0 SRM) Grain 48.78 %
4.0 oz Munich Malt - 10L (10.0 SRM) Grain 2.44 %
1.00 oz Williamette [6.00 %] (60 min) Hops 22.4 IBU
0.50 oz Cascade [6.00 %] (0 min) Hops -
0.30 oz Williamette [6.00 %] (0 min) Hops -
0.20 oz Salt Kosher (Boil 0.0 min) Misc
0.40 oz Coriander Seed (Boil 5.0 min) Misc
0.60 oz Lemon Zest - Fresh (Boil 5.0 min) Misc
0.80 oz Orange Zest, Sweet - Naval (Boil 5.0 min) Misc
1 Pkgs German Ale/Kolsch (White Labs #WLP029) Yeast-Ale

151 degrees mash temperature

Looks pretty darn tasty. Does the kosher salt go in at the end of the boil, and if so why? My guess is it won't last till June unless you can find a good hiding place for a few bottles!

The salt, in my mind, I didn't want the Sodium Chloride to have an impact on the malt. I just wanted the salt for taste and to control the yeast production as in bread.

The lemon and orange are the sour and sweet component. The citrus oils are very volatile so I wanted just the perfume and a slight taste.

The hops will give the beer a floral, spicy and citrus bouquet.

It looks like it is going to be a pretty beer with a light yellow tint. I doubt that it will be very clear do to the wheat, but the color is nice.

I tried 151 degree for the mash temperature so it has a little mouth feel.

The SG came right in on target.

Mashed for 75 minutes and boiled for 90 minutes to knock down the DMS.

Figure to carbonate about 3 volumes to give it a little bite.

Sometime, when you are looking for something to do and are bored, eat an orange but save the skin. Take your Zippo, match or Bic and light the flame; fold the citrus skin over with the white side in and then pinch and squirt the oils into the flame. Lovely! 8)

I will save some bottles at least. Hopefully it will turn out and we can have a tasty brew together.

I changed yeast. I thought I had 029 out and warm but it was 2565. All is good since both are Kolsch yeast.

The hydrometer jar tasted real good. Could just barely taste the lemon and couldn't taste the salt.

See how it does after the fragrance is exhausted with the CO2 ferment.

I was hoping to make the meeting tonight but got home late.

I am going to bottle up some and let Jensen's nose decide. He will be the judge.

Did the Lawnmower Bier again yesterday using 2565 yeast.

I wanted to play with it so the SG was diluted from 047 to 042 and instead of 60oF with a fermwrap, it is working at 65oF or close to there.

What I am trying to do is get some more esters of wine flavor to go with the Lemon and Orange.

If you have never used Wyeast 2565, you need a good size carboy or a blow off tube since it likes to abandon ship. White Labs 029 is more refrained. The 2565 almost got out today but has now settled down.
