Unmalted White Wheat

Does anyone know of any local white wheat that is available? This would be for the imperial lambic project.

For people not from Lawrence, that would be The Community Mercantile (called The Merc) at 925 Iowa. It's the local high priced hippy food store. Great source for steroid free/free range dead critters and pesticide free grains.

Ah, thank you. I figured "Merc" meant mercantile but I still didn't get it. Since posting my original question I've learned that most of the wheat grown around here is hard red wheat.

I don't know what your time frame is but you could probably order it in the next bulk order and get a good price. If you want to split a bag let me know.

what kind of recipes would you use it in beside Lambics? I'm trying to get a cut of as many specialty grains as posible to cut down on my costs.

There are times that I regret asking him to join. Especially since he never comes to Lawrence to brew with my any more.. I cry a little bit each time..

Just kiddin.. He's making some killer beers, and quickly picked up all grain. Now he's just dangerous.
