I found this PDF link on a news group I was reading. It's distributed by the National Honey Board (www.honey.com) and relates some information on using honey in home brew.
All the Mead makers probably are aware of most of this, and it isn't fully comprehensive by any means, but if you are new to honey, this will give you a start.
