Right now I've got 4 brews going:

Primary: Mead from local honey (will move to secondary in 3 weeks)
Secondary 1: Bourbon Barrel Porter (will bottle in 3 weeks)
Secondary 2: Breakfast Stout (will bottle in 1 week)
Bottle Aging: Honey Hefe Weizen (1 week in fridge thus far)

Next I'm thinking of trying another stout or a peach beer. I love Samuel Smiths Oatmeal stout and wouldn't mind going in this direction. My wife likes lighter beers and has expressed interest in a peach beer.

Seeing as I still brew from extract kits, can you make recommendations for kits for doing either?

Google is a great way to find info on recipes. It can take some digging, but I searched for "Samuel Smiths oatmeal stout clone", found a forum discussion about an Austin Supply kit, and went to the online store. These two should fit your request pretty perfectly:
