Star San - misapplication fo Star San HB

As an experiment, I added sanitized water with Star San HB instead of boiling tap water for the make up in my carboy. Normally, I hit my SG right on target for the boil, but I must of gotten carried away with my boil temperature. Generally, I don't have to add extra water for the SG but today was different.

In the past, when I have an excited child that will not stay in the carboy, I just add a funnel and a piece of plastic or aluminum foil on top of the funnel to act as a buffer zone. This makes me wonder if the extra foam is because of the residual Star San HB left in the container.

The direction state to let dry (Local state health departments may require a potable water rinse after using all chemicals.)

Star San HB contains Phosphoric Aid and Dodecylbensensulfonic acid. I need better eye glasses :-)

The acids don't bother me, but it is interesting that the froth is out of control and is very white in nature.....The next thing is head retention of the foam in the finished beer.. This is a dry stout that I really like but has bad head retention.
