Berliner Weiss

Not to hi-jack Andy's thread for the 25 gallon kettle.

Since the BW is open fermentation, I am surprised at how small the foam bubbles are. It smell great but don't how sour it is. Running with PacMan and Lacto. Later, the Brett L. will be added.

Pulled off 2 oz into my sampler. Tasty but the Lacto has not worked much yet.

Drinking a bugged Porter. It is OK but nothing to write home about. The nose is different.

Today:
The kettle is still full of foam and one can here the bubble snap.

The bubbles are larger. Used a spoon and removed most of the bitter brown junk that collects on the side of the carboy (this morning at 3 AM). The stuff that is on the edge of the kettle is like glue, so left it alone.

Removed some more diminishing brown junk this evening at 1915 hours. The foam is starting to reside so I figure that the target is still Thursday to rack before the CO2 barrier goes away and the vinegar bugs find a home.

Pulled another 2 oz sample. It is starting to sour and has a flavor like weak lemonaid.

Really interesting to observe the process. The vapors off the top of the kettle are great. The area is full of fragrance that was never ever close to the same with a carboy.

The BW was moved to a closed 5 gallon keg almost 2 months ago.

I decided to try a sample this afternoon (my afternoon, not yours :P ). Pulled 1/2 pint of the room temperature BW, naturally carbonated in the keg. Pretty foamy at room temp but even I could hear the bubble snap.

This stuff is grand! Will have to get my taster, Jensen to have a go of this since we conspired on it. :mrgreen:

The nose is great with acid perfuming the air. Nice bite that cleans the mouth. Would be good with a sweet pork dinner or BBQ :bounce:

In the refrig but had to give it some more taste testing!

Interesting.

I'm going to try the Wyeast 3191 PC BW Blend sometime within the next month.
Maybe a 10-15min boil and Raw Wheat.

Hope it turns out good. Have read that the blend gives good results.

Somewhere, which the notes don't show is the kettle lid is removed, maybe 7/6/2010, but anyway. The lid was replaced after the foam started to settle.

Here is what I did from my notes:
SG 1.032, 6.1 IBUs of Hallertauer
7/4/2010 Pitched 3 pints Laco starter and and 1 pint just started PacMan into kettle, not boiled.
7/5/2010 Not showing much activity in open ferment with the lid just cracked.
7/10/2010 Took gravity reading, still in kettle 1.002 0.9375 ADF

It is interesting how much the beer improved in the last 2 months. Jensen may remember the fresh beer which had some sourness but not nearly what it is now. I need to take another SG and see if the gravity dropped even lower.

By the way, if you would rather have straight bugs instead of the blend, I have them also.
