Wyeast 1764-PC ROGUE Pacman Yeast

Someone asked me once why I used PacMan yeast (Wyeast1764). The person didn't like the yeast. I got to thinking later if they had even tried the yeast :roll:

To me:
It flocs hard to the bottom of the vessel to the point that the vessel can be turned upside down and the yeast is attached like plaster :lol: It reminds me of English yeast.

It produces very clear beer without a lot of trouble of lagering or gelatine.

It has a very slight fruity flavor to almost a natural flavor, depending on fermentation temperature. It will ferment at 60 degree just like a Kolsch and Alt yeast, which is a nice thing in the Winter.

I can get to 82% ADF and if wanted, it likes high alcohol. It works good with bugs :P

I like the taste in American Pale Ale, Berliner Weiss and others.

Some of the best American Pale Ale beers that I have made have come from this yeast.

Do any of you have complaints with the yeast?

I love it for the same reasons.
What I don't like is after the initial fermentation it falls off and the last points can come slow.

So far, I haven't had any trouble getting it to attenuate the last points, but maybe I am letting it set on the yeast longer or mashing at a lower temperature.

Of course, most of the time, I am in glass so I just look through the beer to see when it is done. My keg is a different story but it is fermenting parallel to glass.

Just completed a starter ferment in a 3 gallon solution to make another Pale Ale. Washed it down with sterilized water to get it ready for a future brew.

Excellent yeast.

Have used this yeast once so far and I'm happy with it. It has no problem drying out a beer, even one loaded with specialties. Carries hop flavors very nice, and keeps a clean malty finish. Brewed a hoppy red with 100% vienna base malt and citra hops that turned out spectacular. Will have to keep this one in my rotation with 1007.

Wy1007 is in the refrig and getting ready to grow it up for an Alt :lol:
