Oktoberfest Beer and Brewfest tickets

Hey guys Im looking for a good Oktoberfest Ale Beer recipe. I don't have the equipment to lager yet so I am going to use a Ale yeast and ferment on the colder side. Here is a recipe that I found, I was hoping that you could tell me if it sounds good or if you have some changes.

“Oktoberfest” Ale

3.3lb Amber LME
3.3lb Light LME
0.5lb Crystal 80L (or 60L if you can’t get 80L)
0.5lb Munich (8L)
0.5lb Pale Malt (standard 2-row)
0.25lb Chocolate Malt (350L)
1oz Hallertau pellets -60min
1oz Hallertau pellets -15min
0.5oz Halertau pellets -2min
2tsp Irish Moss
Yeast= German Alt yeast or American Ale yeast (see below)

Crush grains and put in large grain bag. Steep grain bag in one gallon of water at 150F for 30-40minutes. Remove bag and rinse or let drain into kettle. Bring grain tea to boil. Add extracts. Once boil is reachieved start 75min boil. With 60min remaining add first 1oz hop addition, 15min remaining add second 1oz hop addition and Irish Moss, add 0.5oz addition just before the flame is killed (2 minutes)

And second if anyone has an extra tickets to brewfest they haven't sold I am looking for 1-3. If not maybe I can win one in the lottery. At least I would want one for myself but if there is more I will take them.

Oh also I am picking up the stuff from KC tomorrow around 10:30 - 11 (depends on how much I drink tonight :drunken: ) so if anyone needs anything I could pick you up some stuff.

I would leave out the Amber LME to save from splitting bags. With 80 crystal, the color will still be very dark for an Oktoberfest. So that would be 6.5 pounds of Pale LME for a 5 gallon batch (6 gallon boil). I would replace the 80 crystal with 40 crystal.

Since you are not using Pilsner, I would drop the boil to 60 minutes and save some boil off and time.

I would increase the 60 minute hops to 1.5 ounces.

Use the German Ale yeast over the American to get more flavor unless you are using the American East coast yeast or the Anchor yeast (WLP 051).

With Wyeast 1007, it would give you about a 5.5 ABV beer.

Just my thoughts. Have fun with your beer which is all that counts 8)
