Open Ferment Again

Got a 1.047 SG open ferment going again.

This time, it is with WLP550.

12 gallon batch in a 25 gallon kettle.

I knew this yeast was going to be trouble from growing it up from a slant. It is a huge foam producer. Reminds me of WY2565 Kolsch yeast.

I would guess that in the 12 gallon liquid, there is 20 gallon indicated foam.

Looks really neat. I run the recirculation pump every once in a while to knock down the foam. :mrgreen:

This will be another bugged beer as it moves forward.

Chris,

I have an old 13 gall crock and am looking to doing an open fermentation. Would this be a good container?

I am guessing a 10 gallon batch.

I think it would be an excellent container. I would get it a least above what you are going to move the beer to since a full crock doesn't move well.

When the foam starts to fall (low CO2 production), cover it or move to another container.

I rather enjoy watching the open fermentation. It has life like it is breathing. :lol:

Also, get a sanitized spoon and jar, harvest some primary yeast. Really easy at this point.

Moved the beer last night into carboys. Pitched Brett B, Brett L and Lacto. Now the wait.

I was hopping a 10 gal batch would give me enough head space. Great idea of having the crock up BEFORE filling (sounds like the voice of experience here) as the crock is not light empty.
